Greek Vinaigrette Salad Dressing

A little bit tangy and chock-full of fresh herbs, garlic, and lemon, this Greek Vinaigrette Salad Dressing is always a hit!

Ingredients

  • 1/3 cup red wine vinegar
  • 1 fresh lemon juiced and zested
  • 1 teaspoon Dijon mustard
  • 1 clove fresh garlic grated
  • 1/2 cup extra virgin olive oil
  • 1 teaspoon fresh oregano minced
  • 1/2 teaspoon dried mint
  • 1/2 teaspoon coarse kosher salt
  • 1/2 teaspoon ground white pepper

Instructions

  • Combine the red wine vinegar, lemon juice and zest, Dijon mustard and garlic in a small food processor in tall sided measuring cup that will fit a small immersion blender. Blend well.
  • Slowly pour in the olive oil whisk blending or whisking to make an emulsification.
  • When combined, add the oregano, mint, salt and pepper and give a few more pulses or whisks.
  • Use on your favorite Greek salad. If you don't use it right away, it may separate. Shake or whisk when ready to use.
