Combine the 2/3 mayonnaise or plain Greek yogurt, 1/3 cup apple cider vinegar, 1/3 cup extra virgin olive oil, 2 tablespoons honey, 1 tablespoon Dijon mustard, 1/2 teaspoon coarse sea salt and 1//2 teaspoon ground black pepper in a small food processor and blend until smooth and creamy.
