What is Greek Vinaigrette Salad Dressing?
This dressing is a Greek-inspired take on classic vinaigrette. It combines olive oil and red wine vinegar with Dijon mustard, herbs, garlic, and plenty of fresh lemon.
Zesty and full of herbal flavor, this dressing works well with salad, of course! But you can also use it to marinate meats and vegetables or as a finishing sauce for grilled proteins.

- Red Wine Vinegar – This type of vinegar gives the dressing its classic acidic component and pretty color.
- Fresh Lemon – Zesting the lemon before juicing it will make it easier to peel off the skin.
- Dijon Mustard – Dijon mustard gives the dressing its tangy zip.
- Fresh Garlic – Use a microplane to make quick work of grating the garlic.
- Extra Virgin Olive Oil – This oil gives the dressing its smooth texture that makes it perfect for clinging to greens and other veggies.

How to Make Greek Dressing
It couldn’t be easier to make this vinaigrette!
- Combine. Add the red wine vinegar, lemon juice, zest, Dijon mustard, and garlic into the bowl of a food processor and blend until completely combined.
- Add olive oil. While continuing to blend, slowly add the olive oil to the red wine vinegar mixture until it thickens and is combined.
- Add seasonings. Pour in the herbs, salt, and pepper, and pulse until they are evenly dispersed.
- Serve and store. Use immediately or transfer to an airtight container or mason jar and refrigerate. If it separates when stored, simply whisk it or shake it back together.
Storage and Freezing
This dressing stores well so you can keep it in the fridge or freezer for when you need it. Just remember to give it a good stir or shake before you serve it.

Ingredients
- 1/3 cup red wine vinegar
- 1 fresh lemon juiced and zested
- 1 teaspoon Dijon mustard
- 1 clove fresh garlic grated
- 1/2 cup extra virgin olive oil
- 1 teaspoon fresh oregano minced
- 1/2 teaspoon dried mint
- 1/2 teaspoon coarse kosher salt
- 1/2 teaspoon ground white pepper
Instructions
- Combine the red wine vinegar, lemon juice and zest, Dijon mustard and garlic in a small food processor in tall sided measuring cup that will fit a small immersion blender. Blend well.
- Slowly pour in the olive oil whisk blending or whisking to make an emulsification.
- When combined, add the oregano, mint, salt and pepper and give a few more pulses or whisks.
- Use on your favorite Greek salad. If you don’t use it right away, it may separate. Shake or whisk when ready to use.
